Masak Merah-Cooking chicken meat in red sauce |
1. Pound red onions, garlic, ginger, galangal and lemon grass in a mortar.
2. Pour oil in a kuali. Add item 1 and fry with star anise, cinnamon, cardamons, cumin seeds and fennel seeds.
3. Add chilli powder and chilli paste and stir fry with chicken meat.
4. Add tomato puree and continue to stir fry.
5. Add milk followed by santan and allow to simmer.
6. Add salt and sugar and seasonings.
Keep stirring throughout the cooking to prevent burning of the thick paste. |
Finally, ayam masak merah is now ready for the table. Notice that all the oil rises to the surface when it is done. |
