Masak Dalcha

The appetizing taste of Ramadhan food-the Sarawak Malaysian Dalcha
The Ramadhan bazaar was an eye opener for me.  I got to see food being prepared on the spot.  One colorful dish was the dalcha which Kak Bedah concocted.  Based on the ingredients she generously shared with me, I would like to share how it was cooked in a more comprehensible way.

1.  Blend red onions, lemongrass, garlic, ginger, galangal, fennel seeds (jintan manis), star anise and fry it until fragrant.
2.  Add in chopped beef and fry until fragrant.  Add water and pre-soaked dal beans and cooked until the dal beans soften.
3.  Add chilli paste,chilli sauce, long beans and brinjal.
4.  Add ghee and tomato puree.
5.  Add sugar, seasoning, whole tomatoes, sliced long red chillies, milk and santan.
